Take your tri tip out of the fridge and brush it liberally with approximately 2 tablespoons of oil. Once you’ve got good smoke from the wood chip packet, turn the temperature knob to low on that side and add your tri tip to the opposite, cooler side. Sprinkle half of your favourite dry rub on the top side of the roast (around one heaping tablespoon) and rub.

Insert the temperature probe (if using). Remove the roast from the smoker and let rest for 10 minutes. Use a smoking wood that blends well with beef such as hickory, pecan, cherry or your favorite wood.

Set Your Smoker Up For Indirect Cooking And Bring The Temperature Up To 225°F, Or 275°F For A Faster Cook.

Prepare a skillet to sear the roast. Once you’ve got good smoke from the wood chip packet, turn the temperature knob to low on that side and add your tri tip to the opposite, cooler side. I put my roast in a zip top bag, and it works great.
